ASD 3 Honey Soy Chicken Bites

Inspired by a conversation with ChatGPT about supporting my 3-year-old with ASD Level 3, we developed this recipe to transform his favourite honey soy chicken into a nutrient-rich version that maintains the familiar taste he loves. Our first attempt was a success - he happily ate several pieces!

Working with ChatGPT, we developed this recipe to recreate his favourite honey soy chicken but with hidden nutritious ingredients. By using chicken mince as a base, we could incorporate beneficial ingredients like bone broth and vegetables while maintaining a familiar taste and texture he enjoys.

Our first attempt was a success - he ate several pieces, which is a huge win! We had his regular store-bought honey soy skewers as backup, but he was happy to try these. The texture and shape will improve with practice, but for a first attempt at a healthier alternative, we're really pleased with the results.

Shopping List

Protein & Main Ingredients

  • Organic chicken mince (or boneless thighs/breasts to mince)
  • Eggs (for egg yolk)

Nutrients & Binders

  • Bone broth powder (organic, grass-fed, or free-range)
  • Carrot (finely grated)
  • Almond meal (or ground oats if nut-free)

Seasonings

  • Garlic powder
  • Onion powder
  • Salt
  • Black pepper

Honey Soy Sauce

  • Raw honey
  • Coconut aminos or tamari (gluten-free soy sauce)
  • Sesame oil

Instructions

1. Mix Ingredients

In a bowl, combine:

  • 500g organic chicken mince
  • 1 egg yolk
  • 1 small carrot (finely grated)
  • 1-2 tsp bone broth powder
  • 1-2 tbsp almond meal (or ground oats)
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • Pinch of salt and black pepper

Mix well. Cover and refrigerate for 30 minutes (or up to 6 hours).

2. Shape

Form into small cubes or patties.

3. Bake

Preheat oven to 200°C (400°F).

Line a tray with baking paper and lightly spray with oil.

Bake for 15 minutes, flipping halfway.

4. Make Sauce

Whisk together:

  • 1 tbsp raw honey
  • 1 tbsp coconut aminos or tamari
  • ½ tsp sesame oil
  • 1 tbsp water (optional, to thin)

5. Glaze & Finish

Brush sauce onto chicken. Bake for 5 more minutes.

For extra stickiness, brush another layer after removing from oven.
